Peanut Butter Granola Bars.......
(Super easy to make !)
2 cups of uncooked oats (better yet combine oats, cereals, nuts, seeds etc. to your taste)
1/3 cup low carb peanut butter
1/2 cup Honey
4 Tablespoons sugar-free maple syrup
Mix oats, pb, and honey in medium size bowl. Spread in lightly greased 8-inch baking pan (push down firmly). Top with coating of sugar-free maple syrup (for extra grazing, sprinkle with brown sugar substitute). Let sit for 15 minutes before baking @350 degrees for 20-25 minutes. Makes 16 two inch by two inch bars. I haven't calculated the Nutrient Value exactly, but figure each bar at 100 Cals. ke
Recipe #2-
Low FatCal Cherry Oatmeal Granola Bars
(Super recipe if you like Granola Bars....115 calories each.....large bars !!!!)
1/4 cup pureed prunes (approx. 6 prunes)
1/2 cup pureed apples (approx. 1 apple)
1/2 cup brown sugar
3/4 cup Splenda sugar substitute (= 1 cup sugar)
1 egg
1/4 cup water
1 cup wheat flour
1 teaspoon vanilla
1/2 teaspoon baking soda
3 teaspoons cinnamon
2 teaspoons nutmeg
2 teaspoons ginger
1 cup Museli Cereal
2 cups oats
2 cups finely chopped dried cherries (or any dried fruit)
[cranberries, apricots, raisins, etc.]
Mix all ingredients in order given above. Place in 9X10
oiled baking dish, pack firmly in dish.
Bake for 25-30 mins. @ 350 degrees. Cut into 16 bars. ke
